Cooking For One Or Two – REAL Food Low Carb Salisbury Steak

I often find cubed steaks (round steak that has been run through a tenderizing machine) on markdown.  Whenever I find them I scoop them up and tuck them into the freezer.  One of my favorite meals to make with these cubed steaks is Salisbury Steak.  My version is super easy and low carb too.  And!  It is so delicious!

I start by thinly slicing half a container of button mushrooms and half a small onion.  In a bit of oil or bacon fat sauté the mushrooms and onions until they soften.  Then add two cubed steaks.  Cook the steaks until a nice brown crust forms on each side.  The browning of the steaks makes all the difference in the flavor profile.  Salt and pepper each side.  Stir a heaping spoonful of cornstarch or arrowroot powder into a cup of beef broth.  Pour over the steaks and continue cooking and stirring until gravy thickens.

Served with mashed potatoes or steamed rice is a perfect accompaniment with a side of seasoned green beans.  Or to keep it low carb just enjoy it with vegetables and or a salad.  Super easy and very tasty, healthy and nutritious too!

  2. I've never made cube steak before, but this post sure makes me want to! It looks so delicious. I would want to serve it on mashed cauliflower, along with the green beans...
