Vintage Cookery - Buttermilk Cookies

 


During the winter chickens tend to slow down a lot in their egg production.  Older hens, like mine will stop altogether until warmer weather arrives in the spring.  Egg free recipes were also quite prevalent during the great depression as well as each world war as a way of conserving those protein rich resources.  One of my favorite cookie recipes that does not use any eggs are these delicious cookies that use buttermilk and have an option for adding flaked coconut.

 


Using buttermilk is key to making these cookies taste so good.  Adding the coconut into the cookie dough brings them right over the top, in my opinion, and is my preferred way to make these cookies.  This recipe also makes a lot of and they freeze nicely too.  When I make them I like to wrap some up to share with my loved ones or I will take them to a gathering or a potluck.  They are always a hit.
