In the spirit of keeping things simple this year I am planning to stick with that plan. No extra special shopping involved. Typically, as in years past, I will pull some steaks, either NY Strip or Rib Eyes, (purchased on sale earlier in the year) make some Au Jus from a packet to dip bites of steak in and then serve a bread like Yorkshire pudding or homemade rolls and a vegetable or two on the side. This year I’m going to change it up a bit because, why not? This year I am going to make Lasagna!
Because I volunteered to work on Christmas Eve the plan is to have our big Christmas dinner on Christmas Day. Christmas Eve this year will be Tacos! I love tacos and the BFF will be cooking. Even better!
On Christmas day I will be spending my time in the kitchen preparing everything because that is what I love to do. And, because we keep Christmas very simple, spending time in my kitchen creating a delicious meal is perfect for me. I’m also planning to make freezer meals out of any leftover lasagna so while I am at it I want to make enough to put away a few meals into the freezer to enjoy in the months ahead.
Along with the lasagna I plan to bake a lovely loaf of French Bread and make a nice big green salad to go along with it. I can hardly wait for that beautiful freshly baked loaf of bread, warm from the oven with butter melting. Oh my goodness!
For dessert I plan to keep that simple as well serving up whatever treats we happen to already have on hand. I’m sure, given the baking I plan to do, there will be plenty of cookies and fudge hanging around for us to enjoy. I will also have plenty of wine, coffee and tea, hot cocoa as well as some flavored sparkling water and other beverages to serve.
No worries about the steaks I have sitting in the freezer as they will make their appearance on New Years. We just thought it would be nice to have a little change up this year and it is going to be delicious! What are you planning to serve this year?



I was actually going to do lasagna, too, until it occurred to me that I wouldn't be home from work until 3:30, and it would be time consuming. Crockpot to the rescue! I'm making beef stew with Rhodes rolls, and probably a birthday dessert for my youngest.

DeleteGina, I hope you see this. I always make my lasagna the night before! It’s so easy. Just assemble and put it in the fridge. I don’t even bother to cook the noodles, they soften as they sit in the refrigerator. It does take an extra 15 minutes in the oven, but that part seems worth it to me. In my mind it turns lasagna into a convenience meal as long as I have the time the night before. And if you’re lucky enough to have someone else at home to put it in the oven for you, even better!!
DeleteYour Christmas dinner sounds perfect to me. I’m still debating our Christmas dinner. We do it Christmas Eve so my son and daughter-in-law can spend Christmas Day with her family, and not have such a hectic day. Anyway in years past I have done prime rib, which most of us love, but beef is just too expensive these last couple years, and we don’t have one from a half a beef . Last year I just did snacks, soup, bread, and desserts. It was a big hit with everyone besides my Dh lol. So I’m debating between doing soups again and having steak and seafood. I’m kinda waiting on the weather forecast. If it’s going to be too cold to grill the steaks we will have soups.

ReplyDeleteWhat to serve for Xmas Day...hmm. That's a very good question. I have done Prime Rib in previous years. DD and DH love it, but DS and I don't like it. And it will be just too expensive this year. I am the only one who likes ham, so that's out. It's much too soon for turkey. DS has been asking for duck; perhaps if she promises to cook it, we'll have that. Everybody here loves duck, so that's a real possibility. I just bought 2 briskets at 50% off and tucked them in the freezer. Maybe we'll have those if the duck doesn't pan out. As for sides; those are easy and never take much thought. Rolls, potatoes, and a green veggie for sure.
So much thinking yet no real decisions. LOL--the story of my life.
Prime rib is soooooo expensive right now. Your idea of brisket sounds super good.
DeleteChinese food take out for Christmas eve day lunch. Chicken with trimmings for Xmas Day including a Nantucket Cranberry pie. New Years steaks. Very predictable for us but yummy.
