Healthy & Delicious Meals From My Pantry #3

 


In February I cleared out the stash of freezer meals I had in there so I was in need of a good meal prep session to get some more meals made up and tucked back in the freezer.  I have been super busy the last two months and having something made up and ready to pop into the microwave when I get home is super handy.  Now that I am riding the bus to and from work again it is a lifesaver having those meals ready for me when I get home hungry and tired.

I pulled out some meat and vegetables from the deep freezer, as well as some canned goods form the pantry, and was able to make up a lot of create some delicious components for making meals.  Taco meat to make tacos or taco salad with, a small batch of spaghetti and a really good teriyaki chicken stir fry with jasmine rice was first up.

To go with a salmon fillet and a NY strip steak I put together a cauliflower bake using sour cream, cheddar cheese and green onions.  Delicious!

I made some condiments – salad dressing, dill sauce for fish and a salsa and sour cream sauce to go on taco salads.  I also pulled out some home canned chili, soups and meat options.  Using a can of chicken breast I made a scrumptious curry chicken salad for sandwiches.

In one meal prep session lasting about four hours I was able to add quite a few good options to the freezer as well as a nice line up for the week ahead.  I made a meal plan that me set up and kept me well fed for the month without much effort.  In the process I was able to use things I already had on hand, which works really well to save me a lot of time as well as money on my overall grocery bill.  I had fun with doing my little meal prep and have enjoyed every bite!

  3. Do you have your Salisbury steak recipe located anywhere? That looks like it would be a smashing hit here. I do a nice country fried steak, but I would like to try something a bit different.
    Chickens are laying like crazy here and I have over 6 dozen eggs. I guess you can guess what we have been eating recently! I have baked a lot of pound cakes, (7 Up cake, to be exact as we had cans lying around for some reason) and have popped them in the freezer to give as gifts. One mini Bundt is an Easter gift to a beloved woman who gave up desserts for Lent. She will be here for Easter dinner and that will be in a basket for her with some beeswax candles.

    1. My chickens are laying like crazy too. I've been sharing with my friends, but I think I might have to bake a cake for strawberry shortcake. The Salisbury steak recipe will post on 4/6. Thank you for asking for it. :)
