Testing 123, Testing… Additional Data

 


Would I truly be willing to do my large monthly grocery shopping trip, the one where I fill in any pantry gaps and refill the produce drawer, using the bus and walking?  Even if it was windy and looked like it might rain?  Or it did rain?  Using a backpack and two Trader Joes shopping bags?  Walking a fair distance from the bus station to Winco and then back again?  Do I have the strength in my arms to carry home two heavier bags of groceries?  Yup.  It turns out that I do and the only way I know this is I tried it.  Several times.

 


Can I figure out how go to the mall on the bus and be able to go to the various shops in the surrounding area to acquire the things that I need to clothe myself?  Do some gift shopping?  Treat myself to lunch out while I’m at it?  Or pack a snack instead?  Yes, I can and I’ve done it twice now.  It may take me a while to get there instead of the fifteen minute drive I’m used to, but it certainly can be done and I definitely get more exercise doing it this way.  Plus it’s fun!

 


Can I meet friends at restaurants for lunch or dinner simply by walking?  How about riding my bike to the post office to buy stamps?  Or walk there too?  How about walking to my cardiologist’s office to schedule my annual visit?  Or go?  How about walking and/or riding the bus to and from the airport to fly out and travel?  Travel on my own?  Be safe? Have a good time?  It turns out that I’m quite capable of doing all of those things too.

 


Am I able to plant and grow stuff in my backyard, preserve what I harvest and make a substantial contribution to my pantry and LTFS?  Did I learn from what worked and what didn’t so I can make improvements next year?  It turns out that I can do just that.

 


Am I able to shop for food and clothe myself with minimal resources?  I had a $50 a month grocery budget and no budget this year for clothing.  Yet I fed myself well and was even able to add some clothing items to my closet including two pair of pants, a pair of pajamas, socks, bras, underwear, a couple new tops and a lightweight jacket.  All of these items replaced items I had worn out.

 


I really tested myself a lot this past year.  In addition to the things I’ve already mentioned I also learned that I can now be my own person, live alone, travel alone, do and be whatever I choose and do so guilt-free.  I can focus solely on myself if I want and not feel like I’m taking away from someone else.  That has been huge for me.  Making that shift from full time parent and taking care of others to becoming my own person has been quite an adjustment.  I’ve arrived, but my journey is just beginning.

REAL Food Recipe - My Basic Whole Wheat Bread

 


For many, many years now I have made this whole wheat bread for my family.  Recently I made a few tweaks and changes to adapt it to better serve me in my current stage of life as I find I don’t need a large loaf of bread, but rather two smaller loaves now.  By doing it this way I can have a fresh loaf now and one to tuck away in my freezer for later.  I thought I would share it with you today.

 


Whole Wheat Bread 

2 ½ cups all purpose flour

1 ½ cups whole wheat flour

2 ½ tsp. yeast

1 tsp. salt

1 Tbs. olive oil

1 Tbs. sugar

1 ¼ cups very warm water 

Set your bread machine to the dough cycle.  Place all dry ingredients inside and press start to begin the cycle.  After a couple minutes add oil and water until dough ball begins to form.  You may need to add more water if mixture appears dry being careful not to add too much.  Allow dough cycle to finish.

Remove dough from machine and knead lightly on a floured surface making sure it isn’t sticky.  Divide in half and shape into loaves.  Place each dough into two buttered loaf pans, cover with towel and allow to rise for one hour in a warm place.  Bake in a preheated 400° oven for 22 minutes.  Remove from oven and brush tops with butter and allow to cool for ten minutes before removing loaves to a cooling rack.  Do not slice bread until it is completely cooled.

 



I use the original vintage glass Pyrex loaf pans to bake my bread in.  You can still get new ones in this size as well.  I find these loaves will fit nicely inside a gallon Ziploc bag for storage and freezing.  They are the perfect size for making toast and sandwiches.  To maintain freshness I do not slice the bread until I need it and I keep it in the refrigerator so it lasts longer.

My Tireless Retirement – Week 140

 


It is December!  In fact, the first week is pretty much done.  Can you even believe it?!  For me, it was another busy week in my tireless retired life and I am sitting here feeling very satisfied.

 

Thanksgiving Day leftovers


The day after Thanksgiving I spent some time going through all of the leftovers and putting together a couple meals to reheat and eat (they were delicious!).  I had just enough leftovers for two complete dinners, which was really nice to have on hand.  The rest of the chicken was cut up, wrapped and tucked away into the freezer for future meals.  I had two hard boiled eggs in the fridge so I decided to turn them into deviled eggs to go with my two dinners.  The two leftover dinner rolls were just right to have with them too.  I used the vegetables from the veggie tray someone brought to add to red potatoes and roasted them in the oven to make a sheet pan dinner later in the week.  The rest of the veggies made great snacks.

 

Veggie scraps & chicken bones to make stock


I took all of the chicken bones plus the bag I keep in the freezer which was stuffed full of veggie scraps and put it all in my largest slow cooker to cook down overnight to make stock.  I even added a sprig of rosemary from my garden.  Once the broth was ready I strained it and put it away in freezer containers.  I have big plans for all of that delicious brothy goodness this coming winter.  Yum!

On Black Friday evening I met my gal pals for dinner out at a nearby restaurant.  Then I spent Saturday afternoon helping a friend with a drywall repair project in her bathroom.  Once we got that little chore done she treated me to pizza and salad bar for lunch.  After lunch we stopped into Home Depot to pick up a few supplies and then back at her house I replaced a couple of light switches in her front entryway.  She seemed rather pleased with my handywoman skills as she ticked those items off of her “to do” list.

 


I treated myself to something on Black Friday, actually it was Sunday, but it was a Black Friday special.  I signed up for a year subscription of Hulu & Disney + for $2.99 a month.  I could’ve done just Hulu for 99¢ a month, but I decided not to cheap out – Ha, ha!  I wanted to reward myself for having a really good 2024 and celebrate all that I’ve accomplished this year!  I’m thoroughly enjoying my new TV subscription.

 

Time to put Fall away!


Last Sunday morning found me gathering up and putting away all of the Fall décor that was scattered throughout my house.  Once all of that was tucked back into its bin and put back on the shelf in the garage I carried in the Christmas bin.  Needless to say, it is beginning to look a lot like Christmas!  My tree is up and I even managed to get my fruitcakes made using my grandma’s recipe.  They don’t taste as good as hers, but they’ll do.  Especially once I soak them in the brandy I bought.

I worked all day Monday and had Tuesday and Wednesday off, then worked a half day on Thursday.  That was just the right amount of “working” this past week along with the long holiday weekend.  I had other things to do.  I literally spent the majority of Tuesday relaxing, watching TV and snuggling with my kitties.

On Wednesday morning I gathered up a couple of spent jar candles that still had quite a bit of wax left in them as well as my small bin of candle supplies and decided to make a couple new candles.  I placed the jars in my slow cooker to melt the wax and once melted I poured them together (vanilla + hazelnut crème) to make two small nice smelling candles to burn this Christmas season.

No good deed goes unpunished! 😂

It was a very foggy morning, but I was able to turn my attention later in the afternoon to cleaning up leaves in my yard anyway.  I got out the mulcher to suck up a pile of leaves and filled up the trash can I keep in the backyard.  The chickens will have plenty to leaf litter to put down and scratch around in this winter and spring.

After work on Thursday afternoon I walked over to Winco and got some fresh produce before walking downtown to the bus station and catching a ride home.  By the time I got home it was dark, pretty chilly and the fog was rolling back in again.  It made for a nice wintry walk from the bus stop to my house.

Meals I Prepared: 

After finishing up the Thanksgiving Day leftovers I was in a mood for some yummy hot soup.  I thawed and reheated a container of Thai Curry Soup I had put away in the freezer.  I ate that with the last of the holiday dinner rolls.  I also thawed a ham steak I had cut off the Easter ham and put away in my freezer and used it along with a cup of navy beans, some diced onion and carrots to make a small pot of soup.  I baked a batch of cornbread to go with that soup and it was delicious.

One evening I pan fried a couple of burger patties and baked a potato in the microwave.  I cleared the remaining vegetables from the crisper drawer to roast in the oven as a side dish.  I used one burger patty, half of the potato and a nice sized serving of the roasted vegetables to make a nice dinner.

 


That pretty well sums up my latest week of retirement.  I absolutely love how my home looks and feels right now.  I am feeling very Christmas ready this year and I am looking forward to everything the season has to offer.  Have you put up your tree yet or done any decorating?

Setting Myself Up For A Successful 2025


With a new year on the horizon I want to make sure 2025 is as good as I can make it.  Since retiring in 2022 each year has been amazing.  Each year seems to get better and better.  I want 2025 to be another great year as well so I’m going to do whatever I can to set myself up and begin the year on the right foot once again.  I’m going into 2025 with a plan.  I’m a planner.  I love to think ahead, do some research, set up goals, make lists (I absolutely LOVE to make lists!), come up with some ideas, really have something to work toward and look forward too.


 

In years past I always had BIG plans – 1 year goals, 5 year goals, 10 year goals and beyond.  I don’t do that so much anymore.  My goals are much shorter and simpler.  I don’t need to have long term goals anymore at this stage of my life.

 


I Want To Be Healthy 

This year I’m really going to focus on my overall health and wellbeing.  I’ve made great strides in improving my health since my heart attacks and hospitalization in 2021.  Retiring the following year from an extremely stressful occupation was the best thing I could’ve done to improve my situation.  I’ve been able to get stronger and actually heal my heart, which initially I was told wasn’t likely to happen, but it did.  It took a while, but I did it!  I want to make sure it stays that way.

In the past three years I’ve made tremendous progress with my emotional well being too.  I’ve done a lot of work to understand myself and how I’m hardwired.  I’ve done the therapy and the exercises to figure out how to cope with stress, my anxiety issues, how to better communicate with others and understand them better.  I’ve even managed to learn ways to better work with my super powers.  I feel like an entirely brand new person – inside and out.

 


I Love Myself 

This may sound strange, but for the first time in my entire life I actually love myself.  I even think I’m pretty.  I no longer look in the mirror and think – ugh.  I earned each wrinkle and gray hair.  Scars and stretch marks are my badges of honor.  My body isn’t perfect.  It was never meant to be. 

I give myself grace.  I forgive myself for everything I ever think I did wrong and I no longer dwell on it or beat myself up about it.  I recognize and accept that I have done some really good work and dare I say, I’m even proud of myself for everything I have accomplished so far.  My self confidence (which I admit was shaken to the core when I had my heart attacks because I felt so vulnerable) is through the roof.  I've got my confidence back!

 


Budgets & Finances 

I don’t consider having to live within a budget or on a low income as a negative and I never really have.  I’ve always considered it a challenge to live extremely well with whatever I had to work with at the time and I still do.  This next year will be no different.  I’ve lived this way my entire life, so why not?  If it isn’t broken, why fix it?  I love challenging myself to get the most bang for my buck and share that knowledge and those accomplishments with others.  That is why I’ve been a blogger for so many years and why I bestow these things upon my friends and loved ones.  I want everyone to have the best quality of life possible regardless of their circumstances.

 


NO Bad Days 

In 2023 I decided to challenge myself to have NO bad days and I made it through the entire year with no bad days.  Last year I challenged myself again and guess what?  Success once again!  This year, same challenge.  If I can do it, anyone can.  So I challenge you to do the same.  It is life-changing, to say the least, when you decide that no day will be a bad one.  I might have a bad moment, but the whole day is never lost.  NO BAD DAYS!  Best decision ever!

 


I’m sure 2025 is going to be filled with challenges.  Things are going to happen and we can't predict the future.  But, in my heart and in my gut I feel it is going to be another really great year.  Don’t you think so?  Let’s make it happen.

Vintage Cookery - Christmas Cookies

 


Need a couple easy and budget friendly Christmas cookies to whip up at the last minute?  No worries.  I’ve got you covered.  These cookie recipes come from my Better Homes & Gardens red plaid cookbook.  My grandmother gave it to me one year for Christmas and amazingly I’ve had it long enough for it to now be considered vintage.  Yep.  I’m that old.  There is nothing "new" about this old cookbook.  Nonetheless, these two cookie recipes have long been family favorites.  Enjoy!

 


Thumbprint Cookies 

2/3 c. butter or margarine

½ c. sugar

2 egg yolks (save the whites)

1 tsp vanilla

1 ½ c. flour

jam, any flavor  

Beat sugar and eggs together until creamy.  Add egg and vanilla to butter and sugar mixture.  Combine well.  Stir in flour.  Cover dough and chill in the freezer so dough is easier to handle.  

While the dough chills make this next cookie.  



Coconut Macaroons – A Five Ingredients Or Less Recipe  

2 egg whites

½ teaspoon vanilla

2/3 c. sugar

1 1/3 c. flaked coconut  

Preheat oven to 325 °.  Lightly grease a baking sheet, set aside.  In a medium mixing bowl beat with egg whites until peaks start to form.  Add vanilla.  Gradually add sugar and continue to beat until stiff peaks form.  Fold in coconut with a wooden spoon carefully so you don’t over mix.  Drop by rounded spoonfuls onto baking sheet.  Bake for 20 minutes until they just begin to brown.  Remove to cooling rack.  Store in an airtight container.  Makes two dozen cookies.  

While the cookies bake:  

Remove the other dough from the freezer and roll into one inch sized balls.  Place balls on baking sheet about one inch apart.  Press your thumb into the center of each ball.  Bake cookies at 375° for 10 to 12 minutes.  Remove to cooling rack.  Fill each depression with a little jam and allow cookies to cool completely.  Makes about 3 dozen cookies.  

There you have it!  Two very simple recipes to whip up five dozen delicious cookies with minimal effort and ingredients.  They look so pretty and you will get rave reviews on these cookies too.  Enjoy
